A vegetable grown for its roots, stems, leaves and seeds. The seeds are similar to fennel and are used as a seasoning. Celeriac (or celery root) is a variety of celery grown for its fleshy root.
How to select:
Look for firm, tight bunches with healthy leaves.
Use:
The leaves, fresh or dried, can be used as a garnish for salads, soups, stocks, sauces etc. The stems or stalks can be eaten raw, mixed in salads or cooked. Celery salt is extracted from celeriac. It is used in salt free diets.
How to store:
Refrigerate in a plastic bag and place in the crisper for up to two weeks. If the ribs are wilted, separate the ribs and place them in a bowl of ice water for several minutes before use.
