  How do I use the tava for making crisp dosas?

Before making dosas, heat the tava till it becomes very hot and sprinkle some water. The water should evaporate quickly. Wipe the tava with a soft cloth and reduce the flame. Then rub it with a thick slice of potato or onion dipped in oil. The tava is now ready to use.
