One of the most popular easy-to-make convenience foods in America are cake mixes. The first cake mix took a decade to be developed. The yellow cake mix, the first of its kind, was followed by flavors like white, marble and chocolate malt and then spice cake mix. The only difference between the yellow and white cake mixes, apart from the type of flour, was that latter was also called plain and used only powdered egg white; while the former used powdered egg yolk (that's why the yellow color). As the years went by, people preferred using fresh ingredients, in order to get a more authentic and natural taste of cake. Powdered eggs were removed from the cake mix and directions on the carton suggested the use of two fresh eggs instead. Over the years, many flavors were added, but the love for yellow cake mix still lingers on. Starting with a yellow cake mix is a great and easy way to create a gourmet and delicious cake. Rich taste and extra-moist qualities, and exquisite flavor, apart from easy cooking and nutrition value is what makes yellow cake mix an ingredient for a convenience cake.

How to select

Yellow cake mix has a 6-8% protein content and is made from soft wheat flour. It is chlorinated to further break down the strength of the gluten and is smooth and velvety in texture. Pastry flour is similar to cake mix, although it has not been chlorinated, with an 8-10% protein content and is made from soft wheat flour, so read the ingredients and nutritional labelling before buying. Also check the expiry date and any signs of lumpiness before buying the cake mix. Yellow cake mix can also be easily prepared at home by blending flours with baking soda and sugar.

Culinary uses

" A cake mix is used to make a yellow cake where a delicate tender crumb is desired
" Cookie and cake recipes which call for yellow cake mix should be made using cake mix, if possible.
" Cake mix should not be used to make breads and other leavened products, as it is not strong enough.

How to store

Unopened packet of yellow cake mix can be stored for upto 6 months. Keep cake mix after opening the pack in an airtight container and use within 1-2 months. To prevent insects you can store flour in the refrigerator or freezer making sure the flour is defrosted before using. Flour, when packaged, has about a 14% moisture content. When stored, however, its moisture content will vary. In general, the longer flour is stored the more moisture it loses.
