To make beet and sprouts salad, boil beetroot in a pressure cooker. On cooling, peel the beetroot and cut into cubes. Combine these beetroot cubes and alfa-alfa sprout in a deep bowl. Sprinkle some lemon juice, salt and pepper and toss well. Healthy sprouted beetroot salad is ready for serving.

In India, red beets are highly popular and easily available but, fancy supermarkets do have other variants and you can use any type of beetroots like a candy cane, yellow beet or Crimson Globe, Crosby Egyptian and Early Wonder variety.
Transfer them in a pressure cooker with enough water.
Close the lid and pressure cook for 4 whistles on a medium flame. Allow the steam to release naturally and open the lid carefully.
Test the beetroots by piercing them with a knife or fork; they should be tender and there should be no resistance. If not easily pierceable, cook again for 5 to 10 minutes. Remove the beetroot and cool them slightly.
Peel off the boiled beetroots while they are still warm and discard the skin.
Place the beetroots on a chopping board and cut them into 1” cubes. You can even cut them into slices or wedges if you like.
Measure 2 cups of beetroot for healthy sprouted beetroot salad and transfer them to a bowl.
Add alfa-alfa sprouts to it. You need not cook these sprouts, add them raw only.
Further to make beetroot and alfa-alfa sprouts salad, sprinkle some lemon juice to it.
To this add salt as per taste. Add black pepper powder too.
