Germination means sprouting of the beans i.e shoots grow out of it which are edible. They are mostly utilized in eastern Asian cuisine and have a crunchy texture with a mildly sweet taste.
Even though used mainly in Chinese food, it is fairly consumed in India as well. Bean sprouts can be made with many beans but moong beans are the most preferred choice for this. Sprouted beans are healthier than regular beans as sprouting increases their fiber content along with the vitamin C.
