  1. To make the vegetable chow mein recipe, combine the hoisin sauce, soy sauce, cornflour and ½ cup of water in a deep bowl, mix well and keep aside.
  2. Heat the sesame oil in a broad non-stick pan, add the onions, ginger, garlic and celery and sauté on a medium flame for 1 minute.
  3. Add the carrot, babycorn, mushrooms, capsicum, purple cabbage, bean sprouts and salt and sauté on a high flame for 2 to 3 minutes.
  4. Add the prepared hoisin sauce-cornflour mixture, mix well and cook on a high flame for 2 minutes, while stirring continuously.
  5. Add the noodles, mix well and cook on medium flame for 4 to 5 minutes, while stirring continuously.
  6. Switch off the flame, add the spring onions and mix well.
  7. Serve the vegetable chow mein immediately.

To boil hakka noodles perfectly:

  1. To boil the hakka noodles, take a deep non-stick pan and fill it with around 4-5 cups of water. The water must be enough to cover the raw noodles.
  2. When the water starts boiling, add the salt to taste.
  3. Now add 1 tsp of oil.
  4. Add the noodles.
  5. Cook the noodles for about 8-10 minutes or till they are cooked.Drain the noodles and discard the water.

  9. Sauté on a medium flame for 1 minute. These ingredients are the flavoring agents for your Chow Mein.
  10. Add the carrot. It will add crunchiness to your Vegetable Chow Mein.
  11. Add the baby corn.
  12. Add the button mushrooms. We have not removed the stalk for this recipe. It is totally your choice if you wish to remove. Also, you can make use of any other mushroom varieties like oyster, shitake, etc.
  13. Add the capsicum. Make use of red and yellow capsicum to make the chowmein more colorful.
  14. Add the purple cabbage. You can also make use of green cabbage.
  15. Add the bean sprouts.
  16. Add the salt.
  17. Sauté on a high flame for 2 to 3 minutes.
  18. Add the prepared hoisin sauce-corn flour mixture. This mixture is added to provide the right flavours and perfect consistency to your Veg Chow Mein.
  19. Mix well and cook on a high flame for 2 minutes, while stirring continuously.
  20. Now, add the noodles.
  21. Give it a gentle toss and cook on medium flame for 4 to 5 minutes, while stirring continuously. Make use of two wooden spoons or a noodle tong to mix the noodles.
  22. Turn the flame off, add the spring onions to Vegetable Chow mein.
  23. Mix well and your Veg Chow Mein is ready!
  24. Serve the Vegetable Chow Mein hot.

Noodles topped with yummy healthy vegetables and flavored with hoisin sauce. All I can say is that use plenty of this lovely sauce.
