A perfect food to satisfy small hunger pangs, it keeps you away from binge-eating. I have used a sugar substitute in place of sugar and also used less oil in the dressing. Oregano and pepper impart a mexican flavour to this salad. And the best part is, you do not have to necessarily abide by the selection of veggies used in this recipe – just go with whatever is handy!

Ingredients
To Be Mixed Into A Dressing
1 tsp olive oil or any other oil
1 tbsp lemon juice
1 tbsp chopped coriander (dhania)
2 tsp sugar substitute
1/2 tsp dried oregano
salt and to taste
Other Ingredients
1 cup shredded lettuce
1/2 cup sliced capsicum (red , yellow and green)
1/2 cup sliced baby corn
1/2 cup bean sprouts
1 cup sliced carrots
Method
- It is highly recommended that this recipe be relished by diabetics only occasionally and in small quantities. This is just a mere ‘treat’ and does not qualify for a regular diabetic menu.
- Put the lettuce, capsicum and baby corn in a vesselful of ice-cold water for half an hour. This will make them crisp.
- Drain, wrap in a muslin cloth and refrigerate till ready to use.
- Just before serving, combine all the vegetables and the bean sprouts and carrots in a bowl, add the dressing and toss well.
- Serve immediately.
