Eggless Vanilla Cake, Without Oven recipe - How to make Eggless Vanilla Cake, Without Oven

Ingredients

For The Cake Base
1/4 cup soft butter
1/2 cup condensed milk
1/2 tsp vanilla extract
3/4 cup plain flour (maida)
1/2 tsp baking powder
1/4 tsp baking soda
1/4 cup chilled soda

To Be Mixed Into A Sugar Syrup
1/4 cup powdered sugar
1/4 cup water

For Cake Topping
2 cups beaten whipped cream
edible sprinklers
Method

For the cake base

    For the cake base
  1. To make eggless vanilla cake, combine butter and condensed milk in a deep bowl, whisk well for 2 to 3 minutes till light and fluffy.
  2. Add vanilla essence, whisk well.
  3. Sieve plain flour, baking powder and baking soda in same bowl and whisk well.
  4. Add duke soda and whisk gently to make a batter consistency until no lumps remain.
  5. Pour the batter into 150 mm (6’) inch greased and lined tin.
  6. Bake the cake in a preheated pan for 30-40 minutes, 5 minutes on medium flame then on low flame.
  7. Insert a skewer to check the cake is properly baked.
  8. Remove and allow it cool completely.
  9. Once completely cooled, loosen the edges of the cake and remove the cake from the tin.
  10. Place the cake on a clean, dry turn table and make marking using a serrated knife to cut it horizontally into 3 equal layers. Keep aside.

  1. Apply little whipped cream on the surface of the board, place the middle layer of the cake at the bottom.
  2. Apply the sugar syrup evenly over the layer using a brush.
  3. Apply ½ cup whipped cream and spread it gently using a palette knife.
  4. Put the top layer of the cake upside down over the whipped cream. Press it gently.
  5. Repeat steps 2 and 3 to make 1 more layer.
  6. Place the last layer of the cake over the whipped cream and press it gently.
  7. Apply little whipped cream on the top and on the sides to cover the cake with thin layer of icing.
  8. Refrigerate the cake for atleast ½ hour. This is known as crumb coating, where the crumbs of the cake sets well and doesn’t loose during the cake decorating process.
  9. Apply whipped cream on the top and on the sides of the cake.
  10. Cover the cake with the icing from all the sides using a palette knife or scrapper.
  11. Using a cake comb make a design on the sides.

  2. Pipe out any shaped swirls or shells on the top circumference to decorate the cake.
  3. Sprinkle some colorful sprinklers of your choice on the top and sides of the cake.
  4. Refrigerate the cake again for ½ hour to 1 hour. Serve eggless vanilla cake chilled.

  2. Place the butter paper in the greased tin.
  3. Take a deep pan and place a stand in the centre.
  4. Cover with a lid and keep for pre-heating on slow flame for 5 to 10 minutes.
  5. Meanwhile to make the cake batter, in a deep bowl, add ¼ cup soft butter.
  6. Add ½ cup condensed milk.
  7. Whisk well for 2 to 3 minutes till light and fluffy.
  8. Add 1 tsp vanilla extract.
  9. Whisk well.
  10. Sieve 3/4 cup plain flour (maida) in the same bowl.
  11. Add ½ tsp baking powder.
  12. Add ¼ tsp baking soda.

  14. Add ¼ cup chilled soda.

I have baked it numerous times.... Loved it everytime... Just one question. What is the weight of a single cake made using this recipe. Want to make a 2 kg cake for my daughter''s first birthday which falls on Dhanteras day this year, 2020.

Tarla Dalal    You will have to make approx. 4 times the recipe to get a 2 kg sponge cake. If you have a big mould, you can make it a one go. Else you will have to make the recipe in batches.

Yes I tried the recipe but I find the cake is not sweet enough. Also I added milk instead of water and about 6-7 tablespoons. But I loved your video . You make everything seems so easy. I have been reading your cook books since 1980s

I tried this cake yesterday and it turned out to be so soft and spongy, exactly like how u get in a proper bakery. I garnished it with chocolate glaze icing and whipped cream and it is one of my best bakes till now. I do not have an oven so i baked it in a steamer on slow flame for 45 mins and it was perfect. Thanks for the recipe
