There are innumerable varieties of barfis – made with dairy products, nuts and even fruit pulp! So, there is no dearth of choice, and you can make a different one each time. Remember that all barfis take some time to set into solid form, so schedule it accordingly. You can make them a day in advance and store them in the fridge. As they use dairy products and sometimes fresh ingredients too, most barfis do not have a long shelf-life, so keep them in the fridge and consume within a day or two.
