If you have the entire corn cob then first remove and discard the green outer husk and silky threads.
Trim the corn from one end so the corncob stands flat. To remove the kernels, cut down the corncob starting halfway. Now trim from the other end and repeat to remove all the kernels from the other half of the corncob. Keep aside.
While frozen corn kernels are easily available all around the year, many people still prefer fresh corn kernels. Also, you get fresh sweet corn kernels packed in small packets at local vegetable market.
The easiest way to boil corn kernels is to cook in a pressure cook. Add enough water for 1 whistle. Alternatively, you can even boil the corn in a microwave or cook directly over a stove top.
Add the corn kernels and cook for a whistle. This is not only the fastest way to cook but also prevents loss of nutrients. Avoid adding salt while cooking as it may cause the corn kernels to toughen up. Want a smoky flavor? Grill the corn instead of boiling before making this salad!
Once the American corn kernels are boiled, drain them. Fresh corn kernels are preferable over the canned as they are naturally sweet and flavorful.
Chop the spring onions (whites and greens), capsicum cubes, tomato cubes and keep them ready.
