Ghee Rice Recipe | How To Make Ghee Rice | Ghee Bhat |  Ney Choru |

Ghee Rice, known by various names across India such as Ghee Bhat and Ney Choru, is a fragrant and flavorful rice dish cherished for its simplicity and rich taste. This aromatic preparation, often considered a staple in South Indian cuisine, showcases the nuanced taste of ghee (clarified butter) combined with a subtle blend of whole spices. Unlike more elaborate rice dishes like biryani, Ghee Rice offers a delicate and comforting experience, making it a versatile accompaniment to a wide array of curries and gravies.

The recipe for a perfect Ghee Rice relies on a few key ingredients that contribute to its distinctive aroma and taste. It begins with 1/4 cup of ghee, which forms the base for infusing the flavors. 1 1/2 cups of long grain rice (basmati chawal), soaked for 15 minutes and then drained, ensures fluffy and separate grains. Aromatic whole spices like 25 mm (1") cinnamon (dalchini), 3 cloves (laung / lavang), and 3 cardamom (elaichi)provide a warm and inviting fragrance. The inclusion of 1 tsp finely chopped garlic (lehsun) and 1 tsp finely chopped ginger (adrak) adds a foundational savory note, while 1 1/2 cups sliced onions contribute sweetness and texture. Salt is added to taste, balancing all the flavors.

The preparation of Ghee Rice is straightforward, making it an accessible dish for home cooks. The process begins by heating the ghee in a pressure cooker. Once the ghee is hot, the whole spices—cinnamon, cardamom, and cloves—along with the finely chopped ginger and garlic are added and sautéed for a few seconds on a medium flame. This brief sautéing allows the spices to release their essential oils and aromatic compounds into the ghee, laying the foundation for the dish's signature fragrance.

Following the initial tempering of spices, the sliced onions are added to the pressure cooker. These are then sautéed on a medium flame for approximately two minutes. The aim is to soften the onions and allow them to release their natural sweetness, without browning them excessively, which would alter the delicate flavor profile of the Ghee Rice. This step is crucial for building the base of the dish before the rice is introduced.

Once the onions are sufficiently sautéed, the drained long grain rice is added to the cooker. It's important to mix the rice well with the sautéed ingredients to ensure each grain is lightly coated with the aromatic ghee and spices. Subsequently, 3½ cups of hot water and salt are added. After a good mix, the pressure cooker is closed and cooked for two whistles. Allowing the steam to escape naturally before opening the cooker helps the rice grains remain separate and fluffy. Gently separating each grain with a fork further enhances this desirable texture.

Ghee Rice is best enjoyed immediately after preparation, served hot to fully appreciate its fresh aroma and taste. It is typically garnished with 1/4 cup of fried onions and 1/4 cup of fried cashew nuts (kaju), which add a delightful crunch and extra richness. In different parts of India, Ghee Rice is known by names such as Ney Choru or Nei Choru (especially in Kerala and Tamil Nadu) and Ghee Bhat. It is often eaten for lunch or dinner, frequently served as a light yet satisfying meal on its own or as a perfect accompaniment to a variety of rich and spicy curries like chicken curry, mutton curry, vegetable korma, or various dal preparations.
