These mixed fruit popsicles, also known as homemade fruit lollipops, offer a wonderfully refreshing and healthy no-sugar Indian popsicle option perfect for beating the heat. Bursting with natural sweetness and vibrant colors, they are a simple yet delightful way to enjoy a guilt-free treat. The beauty of this recipe lies in its emphasis on fresh, whole ingredients and its completely no-cook preparation, making it incredibly easy for anyone to whip up.
The base of these delightful popsicles is a refreshing blend of 1½ cups fresh watermelon juice and 1 tsp lemon juice. Watermelon provides a natural sweetness and hydration, while lemon juice adds a zesty tang that brightens the flavors. A unique Indian twist comes from 6 tsp of soaked subza seeds (also known as basil seeds). These tiny seeds, once soaked, swell up and add a fun, jelly-like texture, along with a boost of fiber and cooling properties, making these popsicles even more wholesome.
What truly makes these mixed fruit popsicles visually appealing and packed with varied textures are the fruit additions within each mold. Each popsicle mold is carefully arranged with 6 slices of kiwi and banana, artfully stuck around the bottom, creating a beautiful pattern. Following this, 1 tbsp of pomegranate seeds are added to each mold, providing bursts of juicy, tart flavor and a delightful crunch. This combination ensures a pleasant surprise with every lick, offering different fruit experiences in one pop.
The assembly process is wonderfully straightforward. Once the fruits are arranged in the molds, the prepared watermelon-lemon-subza mixture is gently poured into each popsicle mold, filling it up. The lids are then securely closed, and the molds are placed in the freezer for at least 5 to 6 hours, or until the popsicles are completely frozen solid. The minimal preparation time makes these a fantastic option for a quick dessert or snack.
These popsicles are exceptionally healthy because they contain no added sugar. Their sweetness comes entirely from the natural sugars present in the fruits. This makes them an ideal treat for those watching their sugar intake, including individuals managing diabetes (though portion control for fruits like banana is always wise). Furthermore, the inclusion of various fruits provides essential vitamins, minerals, and fiber. Watermelon is hydrating, kiwi offers Vitamin C, bananas provide potassium, pomegranate is rich in antioxidants, and subza seeds contribute fiber and a cooling effect, making them a truly nourishing option.
Just before serving, allow the frozen molds to sit outside the freezer for about 5 minutes. This brief resting period helps to slightly loosen the popsicles from the molds, allowing for easy unmolding by gently pulling them out. These homemade fruit lollipops are a pure, unadulterated treat, offering a delicious, cooling, and nutritious snack without any artificial ingredients or refined sugars. They are a testament to how simple, natural ingredients can create something incredibly satisfying and good for you.
