To make mango kulfi, combine the saffron and the warm milk in a small bowl, mix well and keep aside. Combine the cornflour and 2 tbsp of water in a bowl, mix well and keep aside. Heat the milk in a deep non-stick pan and boil on a medium flame for 6 minutes, while stirring occasionally. Add the cornflour-water mixture and sugar, mix well and cook on a slow flame for 20 to 25 minutes, while stirring occasionally and scrapping the sides. Switch off the flame and allow the mixture to cool completely. Once cooled, add the mango pulp, saffron-milk mixture and cardamom powder and mix well using a whisk. Add the mangoes and mix gently. Pour the mixture into 11 kulfi moulds and freeze overnight. To unmould, allow the moulds to remain outside the freezer for 5 minutes and then unmould by inserting a wooden skewer stick or a fork in the centre of the kulfi and pulling it out. Serve immediately.

Ingredients
For Mango Kulfi
1/2 cup fresh mango pulp
1/2 cup chopped mango
1/4 tsp saffron (kesar) strands
1 tbsp warm milk
1 tbsp cornflour
4 1/2 cups full-fat milk
5 tbsp sugar
1/4 tsp cardamom (elaichi) powder
Method
- Combine the saffron and the warm milk in a small bowl, mix well and keep aside.

Hi, This is a query. Please help me with: 1. Can''t we use condensed milk like Amul Mithai mate / milkmaid only instead of milk powder and normal milk? 2. Pls give tips on how to unmould? (I have never done / seen it before). 3. Can we put the sticks inside to hold the kulfi? When to put these? Thanks.

Hi Payal, 1. Condensed milk is already in the recipe and do not omit the milk powder as it makes it creamy and also makes it thicker. 2. remove the kulfi after set from the freezer, wait for 5 minutes, put a tick in it and pull it lightly.

In one of your comments, u have mentioned that this recipe has made the use of condensed milk. However, in your ingredients and recipe mentioned above, condensed milk is not at all mentioned. Pls rectify this anomaly. Is condensed milk required in the recipe or not?

Hi I want to make this recipe. But it''s mentioned that Alphonso mangoes must be used. I have lots of mangoes from my garden,but they are different variety,probably Himsagar,as they have a nice aroma and are very dark orange inside. Not very fibrous too. Can i use those instead of Alphonso?

Excellent taste and so very irresistable. But I had choosen to give 4 stars because 15 mins of the cooking time stated in the recipe is not correct. It takes longer than that around 40 mins to cook. Secondly the quantity of sugar could be reduced if mango is very sweet.
