While rice is a popular staple all over Asia, it is all the more indispensable in South India where it forms the basis of the meal, especially during lunch time. Lunch, in a South Indian home, revolves around cooked rice served with a dollop of ghee and myriad vegetables and accompaniments like Sambhar , Rasam and curd. Cooked rice is also used to make other recipes, colloquially known as ‘Mixed Rice’ or ‘Variety Rice’ dishes – that is, rice perked up with a traditional tempering and flavoured with ingredients like lemon, roasted coconut, sautéed veggies, freshly powdered masalas, etc. Here, we show you how to make Cooked Rice the traditional way, through boiling and straining, which yields the perfect texture and whole, separated grains. Alternatively, you can also cook the rice in a Pressure Cooker .

1 1/4 cups raw rice (chawal)
1 tbsp oil
salt to taste
  1. Wash the rice thoroughly and soak in 3 cups of water for 30 minutes. Drain and keep aside.
  2. Boil a vesselful of water, add 1 tbsp of oil and salt.
  3. Add the rice to the boiling water and cook till the rice is cooked, stirring once or twice in between.
  4. Pour into a colander and let the water drain out.
  5. Serve hot or spread on a flat surface till it is cool.
  6. Use as required.

What is cooked rice made of?

  1. Cooked rice is made of 1 1/4 cups raw rice (chawal), 1 tbsp oil and salt to taste.

How to soak rice

  1. To soak rice, we need 1 1/4 cups raw rice (chawal). Whether purchasing rice in bulk or in a packaged container, make sure that there is no evidence of moisture and dirt in the rice. The grains should look uniform in shape, size and colour. 
  2. Clean and wash the rice thoroughly with enough water. 
  3. Add 3 cups of water to the rice and soak it for 30 minutes.
  4. Drain the rice using a strainer. Disacrd the water and and keep the rice aside.

simple and quick way to cook rice.. whenever i used to cook rice it used to be over cooked..but now i have followed the exact method.. to cook rice.. and now it is perfectly cooked.
