भारतीय व्यंजनों में पारंपरिक रूप से विभिन्न प्रकार के खाना पकाने के तेलों का उपयोग किया जाता है, जिनमें घी (स्पष्ट मक्खन), सरसों का तेल, सूरजमुखी तेल और वनस्पति तेल सबसे आम विकल्पों में से कुछ हैं।

भारतीय खाना पकाने के लिए सबसे स्वास्थ्यप्रद तेल नारियल का तेल है। प्रसंस्कृत बीज तेलों के बजाय नारियल तेल का उपयोग करें जैसे सोयाबीन तेल, कैनोला, सूरजमुखी तेल, मकई तेल और अन्य ओमेगा -6 समृद्ध तेलों का उपयोग बहुत कम मात्रा में किया जाना चाहिए।

भारतीय खाना पकाने के लिए ऐसा जैतून का तेल चुनें जिसमें एमयूएफए की मात्रा अधिक हो। यह भारतीय सलाद, स्टर-फ्राई और सब्जियों के लिए सबसे अच्छा विकल्प है जिन्हें केवल मध्यम आंच पर पकाया जा सकता है।

जैतून का तेल के फायदे, स्वास्थ्य विषयक (benefits of olive oil in Hindi)

जैतून का तेल एक मजबूत एंटीऑक्सिडेंट और हार्ट के लिए अच्छा होता है। इसके अलावा यह अनुत्तेजक प्रभाव (anti-inflammatory effect) देता है। यह एक स्वास्थ्यप्रद तेल है जिसे आप चुन सकते हैं। इसमें लगभग 77% MUFA होता है। जैतून का तेल, विशेष रूप से एक्स्ट्र वर्जिन जैतून का तेल, इसकी प्राकृतिक अवस्था में अपरिष्कृत तेल है और रसायनों (chemicals) से मुक्त होता है। इसके अलावा, जैतून के तेल में पॉलीफेनोल भी होते हैं - एक प्रकार का एंटीऑक्सीडेंट जो शरीर की कोशिकाओं की रक्षा करता है और साथ ही दिल की सेहत को भी बनाए रखता है। भूमध्यसागरीय खाना पकाने में लोकप्रिय, यह तेल सलाद ड्रेसिंग या झटपट भूनी हुई सब्जियों के लिए सबसे अच्छा माना जाता है। उच्च तापमान पर लंबे समय तक खाना पकाने के लिए इसका उपयोग नहीं किया जा सकता है। ध्यान दें कि अंत में इसमें वसा ही होता है, इसलिए इसका अधिक सेवन न करें। सुपर लेख पढ़ें कि कौन सा तेल स्वास्थ्यप्रद है, वनस्पति तेल क्यों  टालें।
