4-5 watermelon sliced in flat pieces , desseded
6 strawberries
250 gms arugula leaves , washed , and cut in big pieces
3 tbsp cranberry
2 tbsp crumbled feta cheese

For The Caramelised Walnuts
3 tbsp brown sugar
100 gms walnuts (akhrot) ) , broken into pieces

To Be Mixed Into A Dressing
2 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp powdered sugar

  1. Combine the sugar, 3 tbsp water, walnuts in a non-stick pan and cook on a medium flame put for 3 to 5 minutes or till the sugar melts and coats the walnuts well, while stirring continuously.
  2. Remove from the flame, cool and break them into pieces. Keep aside.

How to proceed

  1. Lay the flat pieces of watermelon on a plate, crumble some feta on the piece and lay another piece over it.
  2. If you do not have similar pieces just randomly arrange pieces put feta on each piece and stack it.
  3. Put the rocket around the salad, sprinkle some strawberries, caramelised walnuts, cranberries
  4. Put the salad in the freezer for 10 to 15 minutes so the watermelon get chilled. .
  5. Just before serving pour lightly the dressing over watermelon and the rocket.

Watermelon and feta make a lovely combo for a salad. Add to that cranberries and caramelised walnuts significantly makes the salad fruity and sour. Topped with a lovely balsamic dressing and served chilled. Healthy and very tasty.
