Lemon juice and mint go hand-in-hand to create a tangy tasting dressing. Sweet corn contributes a mild sweetness that combines well with pineapple, lettuce and watermelon.
A perfect salad for summertime that goes well a glass of cool and refreshing Panha and some Low-Cal Potato Wafers .

Ingredients
Main Ingredients
1 cup watermelon (tarbuj) cubes
1 cup pineapple cubes
1 cup boiled sweet corn kernels (makai ke dane)
1 cup cucumber cubes
1/2 cup lettuce , torn into pieces
salt to taste
For The Mint Dressing
1/2 cup chopped mint leaves (phudina)
1 tsp grated ginger (adrak)
1/2 tsp finely chopped green chillies
1 tsp lemon juice
1 tbsp honey
salt to taste
Method
- Combine the mint leaves, ginger, green chillies and lemon juice with 1 tbsp of water in a mixer and blend to a coarse paste.
- Transfer the mint paste into a bowl, add the honey and salt and mix well. Keep aside.
- Combine all the ingredients in a deep bowl, pour the mint dressing over it and toss well.
- Serve immediately.
