Gujaratis love thepla and it is an important part of Gujarati food habits. lauki thepla are an inherent part of Gujarati meals, and are used for regular meals, travelling and for picnics! When you anticipate a busy fortnight, you can make a large batch of theplas and keep them in stock and relish with curds and chunda or batata chips nu shaak.
We have created a healthy doodhi thepla that is full of protein, calcium and fibre. You'll be amazed at how easily this traditional Gujarati dish can be made 'healthy' by reducing the oil that is considered so essential to cook them. Here, we have made thepla using doodhi “ doodhi thepla”.
With just handful of ingredients that are easily available in our kitchen shelves, this doodhi thepla is so tasty because of the perfectly flavored dough. Method to make doodhi thepla is very quick and simple as very few ingredients are used. All you need to do is knead a soft dough using whole wheat flour, grated bottle doodhi, low- fat curd, turmeric and red chilli powder and very little oil so that the dough doesn’t dry out. Further, divide the dough roll into small chapatti and cook using very little oil. This doodhi theplas are made using minimum and very little oil. We have used whole wheat flour for making thepla as it has ample of health benefits. Next, doodhi helps reduce blood cholesterol levels and regulate blood pressure and ensures a proper blood flow to heart and they're onwards to all parts of the body. It helps prevent acidity and good for diabetics. Curd in the recipe makes the lauki thepla soft, we have used low-fat curd as this is a healthy recipe.
lauki thepla also make a great travelling snack, as they stay well for a couple of days without refrigeration and also beautifully complement a hot cup of Masala tea . Also, the addition of curd in the dough is skipped while making thepla for travelling. Cool them completely and store them in an air-tight container or cover with an aluminum foil. Be generous with the oil while cooking, or you might end up with dry and hard doodhi theplas.

For the doodhi theplas- To make the doodhi theplas, mix all the ingredients and 3/4 tsp oil and knead into a soft dough using water only if required.
- Grease your hands with the remaining 1/4 tsp oil and knead the dough again to smoothen it.
- Divide the dough into 15 equal portions.
- Roll out each portion thinly into a 125 mm. (5”) diameter circle using a little wheat flour for rolling.
- Heat a non-stick tava (griddle) and cook each thepla till golden brown spots appear on both the sides.
- Serve the doodhi theplas hot.
