1 1/2 cups peeled and thickly sliced potatoes
2 tbsp oil
1/2 tsp mustard seeds ( rai / sarson)
1/4 tsp asafoetida (hing)

1 1/2 tsp coriander-cumin seeds (dhania-jeera) powder
1 tsp chilli powder
1 1/2 tsp besan (bengal gram flour)
1/2 tsp plain flour (maida)

how to wash and cut brinjal, baingan

  1. For this recipe we have used the big variety which looks like this. 
  2. Wash it under running water. 
  3. Wipe it using a kitchen towel till dry. 
  4. Cut and remove the crown of the brinjal and discard it. 
  5. Place the brinjal on a chopping board and cut into 2 halves vertically. 
  6. Place 1 halve of the brinjal on the chopping with the flat side facing downwards. Make thick vertical cuts at regular intervals using a sharp knife. 
  7. Cut each piece horizontally to get 2 pieces, this is called sliced brinjal. Keep aside.

  2. Add 1/2 tsp mustard seeds ( rai / sarson)
  3. Add 1/4 tsp asafoetida (hing)
  4. Add 1/4 tsp turmeric powder (haldi)
  5. Add 1 1/2 tsp coriander-cumin seeds (dhania-jeera) powder. If you do ont have this mix powder you can use half and half of dhania powder and jeera powder. 
  6. Add 1 tsp chilli powder
  7. Sauté on a medium flame for 30 seconds.

  10. Mix gently. 
  11. Cook on a slow flame for 10 to 12 minutes, while tossing occasionally. 
  12. Add 1 1/2 tsp besan (bengal gram flour).
  13. Add 1/2 tsp plain flour (maida).
  14. Add salt to taste. 
  15. Mix it gently. 
  16. Cook on a medium flame for 10 t o12 minutes, while tossing it occasionally.

Ghar mein koi nahi hai. Sab native place gaye hai. Yeh recipe easy lagi aur aaj lunch me banyee. Mast bani. Paheli baar koi subzi banayee. Bada maazza aaya. Laga raha hai ki khana banna/pakka sakta hoon.
