For mushroom and onion soup- To make mushroom onion soup, combine 2 stock cubes along with 3 cups of hot water, mix well and keep aside.
- Heat 1 tsp oil in a broad pan, add garlic and sauté for few seconds.
- Add onions and sauté on medium flame for 2 minutes.
- Add mushrooms and cook on medium flame for 3 to 4 minutes, while stirring occasionally.
- Remove a little mixture in a bowl and cool completely. Blend it to a smooth puree using ¼ cup of water.
- Heat 1 tsp oil in a deep kadhai, add wheat flour and sauté for few seconds.
- Add the prepared puree, remaining sautéed mixture, veg stock, salt and pepper to taste.
- Mix well and cook on medium flame for 5 minutes, while stirring occasionally.
- Serve mushroom onion soup hot.
