Cream of tomato soup is a tomato based thick soup which is probably the first choice as an appetizer to be had before the meal, when we go outdoors. This is a popular winter recipe in India. I love having cream of tomato soup on rainy days and it is my comfort food in soups.
There are many variations to the cream of tomato soup and this is our Indian style cream of tomato soup version of it. The recipe is easy to cook, even a beginner can nail this recipe. We have made it using minimum of ingredients. To make creamy tomato soup, you need to cook tomatoes with half cup of water and whole spices like bay leaf and pepper corn, all the ingredients are cooked together and once cooked bay leaf is discarded. It is all cooled and blended in a mixer. Then we have added butter in a deep non-stick pan, add the plain flour and sauté. Add the prepared tomato mixture, 1 cup of water, tomato purée, mix well and cook. Also, add the sugar, salt, pepper and fresh cream, mix well and cook on a medium flame for 2 minutes and turn off the flame. Our cream of tomato soup is ready to be served!
Everyone in my family loves tomato soup and we also make it when we wish having something very light for dinner! Cream of Tomato Soup is a choice that perfectly pleases the Indian palate. A combination of tomato puree and freshly cooked tomatoes are combined with spices and blended into a rich soup, which is made all the more luxuriant by the addition of fresh cream.
In addition, some easy tips and recommendations while preparing the cream of tomato soup recipe. I would emphasise to use ripe and juicy tomatoes and avoid raw or hard tomatoes. Ripe tomatoes would yield more creamy and coloured soup and with raw you may end up with bitter taste.
Garnish tomato soup with fresh cream and serve hot with fried croutons.

Ingredients
For Cream Of Tomato Soup
4 cups finely chopped tomato
3 whole black peppercorns (kalimirch)
1 1/2 tbsp butter
1 tbsp plain flour (maida)
1/4 cup tomato puree
2 tsp sugar
salt and to taste
1 1/2 tbsp fresh cream
For The Garnish
2 tsp fresh cream
For Serving With Cream Of Tomato Soup
1/4 cup deep-fried bread croutons
Method
For cream of tomato soup
- To make cream of tomato soup, combine the tomatoes with 1 cup of water in a deep non-stick pan, add the bayleaf and peppercorns, mix well and cook on a medium flame for 8 to 10 minutes, while stirring occasionally.
- Remove the bayleaf and discard it. Allow the mixture to cool completely.
- Blend the mixture in a mixer till smooth and strain it using a strainer.
- Heat the butter in a deep non-stick pani, add the plain flour and sauté on medium flame for 1 minute.
- Add the prepared tomato mixture, 1 cup of water, tomato purée, mix well and cook on a medium flame for 1 minute.
- Add the sugar, salt, pepper and fresh cream, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
- Garnish the cream of tomato soup with fresh cream and serve hot with bread croutons.

To prepare cream of tomato soup | Indian style cream of tomato soup | creamy tomato soup, in a deep non-stick pan, take tomatoes. Firstly, make use of red ripe tomatoes to extract maximum flavours and not have a sour soup, next, wash and clean them & remove the eye before chopping them

Add 1 cup of water. Instead of water you can even make use of vegetable stock.

Add bayleaf.

Add peppercorns. I love tossing in some onions and garlic for an added flavour.

Mix well and cook on a medium flame for 8 to 10 minutes or until the tomatoes have softened and lost their raw aroma, while stirring occasionally.

After cooking, remove the bayleaf and discard it.

Allow the mixture to cool completely and transfer to a mixer jar

Blend the mixture in a mixer till smooth consistency

Strain it using a strainer to remove fibres and seeds from the tomatoes.

To prepare creamy tomato soup, heat the butter in a deep non-stick pan. Also, you can make use of oil or ghee but butter provides a rich flavour

Once the butter has melted, add the plain flour. You can also make use of whole wheat flour as a thickening agent.

Sauté on medium flame for 1 minute

Add the prepared tomato mixture

Pour 1 cup of water. You can add more or less water to attain a consistency of your desire but, generally cream soups are slightly thick.

Add tomato purée

Mix well and cook on a medium flame for 1 minute

Add sugar. It helps in balancing the tanginess from tomatoes. You may require more or less depending upon the sourness of tomatoes.

Add salt and pepper. You can even flavour the soup with fresh basil or any other herbs of your choice like parsley, coriander, rosemary, sage.

Finally, some fresh cream. For a vegan cream of tomato soup, use oil instead of butter and blended almonds or cashews instead of fresh cream.

- Pour the cream of fresh tomato soup in serving bowl and garnish with fresh cream.
