Jalfrezi is a cooking method known the world-over. It is basically a preparation of vegetables or meat in a saucy base.
Vegetable jalfrezi features veggies in a base of tomato sauce spiked up with sautéed green chillies, ginger, onions, and such flavourful ingredients.
Enjoy this dish piping hot with rotis , a wrap or a roll of your choice.
Have a go at other mixed vegetable subzis like Mixed Vegetable White Korma or Mixed Vegetables in Palak Methi Gravy .
- Heat the ghee in a deep kadhai, add the green chillies, ginger and onions and sauté on a medium flame for 1 minute.
- Add the tomatoes, tomato ketchup and coriander and cook for 3 to 4 minutes, while stirring occasionally.
- Add the, boiled vegetables, spring onions, chilli powder, sugar, salt and 2 tbsp of water and cook on a medium flame for 2 to 3 minutes, while stirring occasionally.
- Serve hot.
