A tropical delight that combines tangy pineapples and soothing coconut milk with rice in a way that pleases the palate! This lip-smacking Carribean Rice will be enjoyed by kids who will love biting into the juicy pineapple cubes. Adults too will appreciate the blend of flavours and mild seasoning, making this a blockbuster.
- Combine the rice, coconut milk, pineapple juice, coriander and red chillies in a deep bowl and mix well. Keep aside.
- Heat the butter in a non-stick deep pan and add the cumin seeds.
- When the seeds crackle, add the rice-coconut milk mixture, pineapple cubes and salt, mix gently and cook on a medium flame for 2 minutes, while stirring occasionally.
- Serve immediately.
