Further, we have prepared a cheese sauce which is super easy to make yet extremely luscious! We have made the sauce by heating oil in a pan, sautéed garlic and spring onions. Followed by addition of milk, processed cheese, salt, pepper and chili flakes. We have cooked it for atleast 5 minutes, make sure you keep stirring continuously or the cheese may stick to the bottom of the pan. Switch the flame off and add mozzarella cheese and mix well, our cheesy sauce is ready! You can relish the super cheesy and tasty sauce with nachos too!
Next, to assemble place some fries in a plate, pour the cheese sauce, followed by drizzling of sweet and hot chilli sauce. Sprinkle jalapenos and olives evenly over it. Other crunchy vegetables like sun-dried tomatoes, boiled corn kernels, chopped bell pepper, capsicum can also be added. Make sure to serve spicy creamy French fries immediately or it may turn soggy!!

- Heat the oil for deep-frying in a deep non-stick kadhai and deep-fry the french fries a few at a time till they turn golden brown and crisp in colour.
- Drain on an absorbent paper and sprinkle little salt and toss well. Keep aside.
- Heat the oil in a broad non-stick pan, add the garlic and sauté on a medium flame for a few seconds.
- Add the spring onion whites and greens and sauté on a medium flame for 1 minute.
- Add the milk, cheese, little salt, pepper and chilli flakes, mix well and cook on a medium flame for 4 to 5 minutes or till thick.
- Switch off the flame, add the mozzarella cheese and mix well.
- Place the french fries on a serving plate and pour the prepared cheese sauce evenly over it.
- Top it with hot and sweet chilli sauce, jalapenos and olives evenly over it.
- Serve the spicy creamy french fries immediately.

Once the oil is hot, carefully drop a few french fries at a time. There is no need to thaw frozen fries. Since when frozen the fries are quite dry, making the end result incredibly crispy. If you thaw, they tend to become mushy and also splash a lot of hot oil.
Deep-fry till they turn golden brown and crisp in colour from both sides while flipping them to cook evenly. Do not stir a lot or else the fries might break.
Drain using a slotted spoon and remove on an absorbent paper.
Sprinkle a little salt and toss well. It is important to sprinkle salt while the fries are still warm so they coat nicely.
Similarly, deep-fry all the french fries and keep aside.
To prepare spicy-creamy sauce, heat the oil in a broad non-stick pan.
When the oil is hot, add the garlic and sauté on a medium flame for a few seconds.
Add the spring onion whites and greens and sauté on a medium flame for 1 minute.
Break the cheese slice roughly using your hands and add. If you do not have cheese slices make use of grated processed cheese.
Add a little salt and pepper.
Add chilli flakes as per the spice level you prefer.
Mix well and cook on a medium flame for 4 to 5 minutes or till thick. Keep stirring so, the cheese doesn’t stick to the bottom of the pan and burn.
Switch off the flame, add the mozzarella cheese. I like to use a combination of cheeses to get the perfect flavour. You can make use of any cheese variants of your choice like cheddar, Monterey Jack, nacho cheese etc.
Mix well and our spicy-creamy sauce is ready. If you do not use the sauce immediately, it will thicken so add more milk to thin out the sauce to your desired consistency.
