2 cups potatoes , peeled and cut into fingers
salt and to taste
oil for deep-frying

  1. To make the french fries, boil a vesselful of water with a little salt. Add the potato fingers and parboil them for 5 to 7 minutes. Drain and keep aside.
  2. Heat the oil in a kadhai and deep-fry a few potato fingers at a time on a medium flame till they turn crisp and golden brown in colour from all the sides.
  3. Drain the french fries on absorbent paper, sprinkle salt and pepper on top and toss gently.
  4. Serve the french fries immediately.

  1. For really crisp french fries, use the variety of potatoes with a higher starch content popularly known as french fries potatoes/chip potatoes. In maharashtra, they are called talegaon potatoes.

How to make homemade french fries

  1. Wash, peel and cut the potatoes in half the long way, lay the cut side flat on the chopping board and further cut into thin strips of approx. 1" thickness. Keep the potato fingers immersed in cold water. Not only it prevents them from turning brown but also, helps to get rid of excess starch, resulting in crisper fries. The potato fingers must be cut evenly so, they cook uniformly.
  2. Boil a vesselful of water with a little salt.
  3. Add the potato fingers and parboil them for 5 to 7 minutes. Ensure you do not boil them for longer or else they will be overcooked and break.
  4. Drain the potato fingers.
  5. Refresh it under running water so, the cooking process is restricted.
  6. Heat the oil in a deep non-stick pan and deep-fry a few potato fingers at a time on a medium flame. Put the potato fingers one by one or else the oil might splutter or the potato fingers would stick to eachother while frying. Fry till they turn crisp and golden brown in colour from all the sides.
  7. Remove the french fries with the help of a slotted spoon and drain on absorbent paper.
  8. Sprinkle salt and pepper evenly over the french fries while they’re still hot and toss gently.
  9. Serve the french fries immediately with ketchup or any quick dips like garlic mayonnaise, achari dip or veg cream cheese dip.
  10. Homemade french fries can be served along with paneer and corn burger or black bean and caramelized onion burger. Also, you can use the potato french fries to make Schezuan Fries Hot Dog Sandwich, Chilli Garlic Fries.

What is the recipe to store the fries in the freezer? Last time I tried, after par-boiling the potatoes, I dried those under the fan and kept in ziplock bags in the freezer. But many turned dark/ black. Don’t know the reason though

Tarla Dalal    Hi, Make sure after you have parboiled the potatoes.. you rinse or keep it in ice cold water.. for sometime.. drain it.. pat them veey well.. make sure no water droplets are there.. then you can store it in a ziplock bag.. and freeze it.. The reason for getting it dark.. is.. to allow it to dry under fan. After pat dry immediately store it in the freezer.
