The all-time favourite bhaji made of mashed potatoes, tomatoes and onions perked up with pav bhaji masala, is layered atop a slice of toasted bread, topped with cheese, and baked for a few minutes till the cheese melts and coats the bhaji and bread.
With all the charm of pav bhaji, this snack has the added benefit of convenience as it comes in a single, easy-to-serve form!
- Heat the butter in a deep non-stick pan, add the garlic paste and sauté on a medium flame for 30 seconds.
- Add the onions and sauté on a medium flame for 2 minutes.
- Add the capsicum and sauté on a medium flame for 1 minute.
- Add the tomatoes, mix well and cook on a medium flame for 4 minutes, while stirring occasionally.
- Add the potatoes, green peas, pav bhaji masala, turmeric powder, chilli powder, salt and ¾ cup of water, mix well and cook on a medium flame for 3 minutes, while mashing it with help of a potato masher.
- Switch off the flame, add the lemon juice and coriander and mix well.
- Place a toasted bread slice on a clean, dry surface, spread ¼ cup of bhaji and spread it evenly. Sprinkle 1 tbsp of cheese evenly over it.
- Repeat step 1 to make 7 more pav bhaji toasts.
- Heat a non-stick tava (griddle), place a toasted pav bhaji toast on it, cover with a lid and cook on a medium flame for 3 minutes or till the cheese melts.
- Repeat step 3 to make 7 more pav bhaji toasts.
- Serve immediately.

The pav bhaji toast is like an open-toast which not only looks appealing but it's also appetizing. There are many ways to make open-toast recipes. You can use your creativity and make an assortment of veg open-toast recipes. Here are some of my favorite open-toast recipes:
For the bhaji of pav bhaji toast, heat the butter in a deep non-stick pan. The real taste of pav bhaji comes with a generous use of butter also, you can add a little oil to the pan to prevent the butter from burning.
Add the garlic paste.
Sauté on a medium flame for 30 seconds. For a spicier flavour and brighter colour, you can make use of Homemade Chilli Garlic Paste.
Add the onions.
Sauté on a medium flame for 2 minutes or till they are translucent.
Add the capsicum.
Sauté on a medium flame for 1 minute.
Add the tomatoes. If you are lazy to chop then simply puree them to a paste.
Mix well and cook on a medium flame for 4 minutes, while stirring occasionally. Cook till tomatoes are soft and mushy. Tip: You can add a little salt which will help in breaking the tomatoes easily.
Add the potatoes. We are using only 1 cup of potatoes for which you might require only 2 medium sized potatoes. Check out our quick and easy recipe to boil potatoes in a microwave.
Add the green peas. Similarly, boil the green peas in a microwave in just 5 minutes.
Add the pav bhaji masala. My kitchen is always stocked with this jar of fresh homemade pav bhaji masala. You must try this recipe to make delicious spice-mix for pav bhaji at home.
Add the turmeric powder. It is totally optional.
Add the chilli powder. If making for kids, decrease the quantity if you want.
Add the salt and ¾ cup of water.
Mix well and cook on a medium flame for 3 minutes.
Mashing it with the help of a potato masher till everything is chunky yet smooth.
Switch off the flame, add the lemon juice and coriander.
Mix well and our bhaji for the pav bhaji toast is ready!
To make the pav bhaji toast, we will first toast the bread slices using a pop-up toaster or oven. We have made use of white bread slices but, you can even use whole wheat bread or multigrain bread. Place a toasted bread slice on a clean, dry surface.
Place ¼ cup of the prepared bhaji.
Spread it evenly with the help of a spoon or a butter knife.
Sprinkle 1 tbsp of cheese evenly over it. For a stringy effect, make use of mozzarella cheese or pizza cheese.
Repeat step 2 to 5 and make 7 more pav bhaji toasts.
Heat a non-stick tava (griddle). Alternatively, you can bake all the toast in an oven.
Place a toasted pav bhaji toast on it.
Cover with a lid this will help in creating a steam and melting the cheese.
Cook on a medium flame for 3 minutes or till the cheese melts.
Repeat step 7 to 9 and make 7 more pav bhaji toasts.
