Ingredients

For Pav Bhaji Sandwich
1 1/2 cups chopped and boiled mixed vegetables ( potatoes, cabbage, carrot, green peas, and cauliflower)
2 tbsp oil
1/4 cup finely chopped onions
1 tsp garlic (lehsun) paste
1/4 cup finely chopped capsicum
1/2 cup finely chopped tomatoes
2 tbsp chopped coriander (dhania)
1/2 tsp chilli powder
1 1/2 tsp pav bhaji masala
salt to taste
8 ladi pav
butter for cooking
Method

    For pav bhaji sandwich
  1. To make pav bhaji sandwich, heat the oil in a broad non-stick pan, add the onions and garlic paste and sauté on a medium flame for 1 to 2 minutes.
  2. Add the capsicum and sauté on a medium flame for 2 minutes.
  3. Add the tomatoes, mix well and cook on a medium flame for 2 minutes, while stirring occasionally.
  4. Add the chili powder, pav bhaji masala, mixed vegetables, salt and ¼ cup of water, mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally and mashing it very well with a potato masher.
  5. Add the coriander and mix well. Keep aside.
  6. Slit all the pavs vertically. Heat a non-stick tava (griddle), add little butter and slit open the pavs and place on it.
  7. Cook on a medium flame till they turn light brown and crisp on both the sides. (add more butter if required).
  8. Place a pav on a clean, dry surface and spread 2 tbsp of the prepared bhaji on the lower halve and close the sandwich.
  9. Serve the pav bhaji sandwich immediately or cool completely and pack in an aluminium foil and put in a dabba.

How to make pav bhaji sandwich

  1. To prepare  pav bhaji sandwich recipe | leftover pav bhaji sandwich | pav sandwich | we will first make the bhaji. Heat the oil in a broad non-stick pan. Oil can be replaced with butter to provide an amazing flavour to bhaji. 
  2. Add onions.
  3. Add garlic paste. If you are Jain, skip adding onions, garlic. 
  4. Add capsicum.
  5. Sauté on a medium flame for 2 minutes.
  6. Add tomatoes.
  7. Mix well and cook on a medium flame for 2 minutes, while stirring occasionally or until they are soft and mushy.
  8. Add chili powder. You can add more or less, as per the spice level you prefer. 
  9. Add pav bhaji masala.
  10. Add mixed vegetables. We have used potatoes, cabbage, carrot, green peas, and cauliflower. You may add any vegetables of your choice.
  11. Add salt and ¼ cup of water. Mix well and cook on a medium flame for 3 to 4 minutes, while stirring occasionally.
  12. Do mash it very well with a potato masher.
  13. Add the coriander.
  14. Mix well and our bhaji is ready. Keep aside. I generally make pav bhaji sandwich using leftover bhaji.
  15. Slit all the pavs vertically. Learn how to make whole wheat Ladi pav .
  16. To toast the ladi pav, heat a non-stick tava (griddle) and add little butter. You can even make use of a sandwich griller to make a grilled pav bhaji sandwich. 
  17. Place the slit open pavs on it. Instead of ladi pav, you can even make use of regular white bread slices or whole wheat bread slices to make a normal sandwich.. 
  18. Cook on a medium flame till they turn light brown and crisp on both the sides. (add more butter if required). 
  19. Repeat steps 18 to 20 to cook the remaining pav similarly.
  20. Place a pav on a clean, dry surface.
  21. Spread 2 tbsp of the prepared bhaji on the lower half and close the sandwich. Cheese lovers can toss in some grated cheese or for an added crunch, stuff in some sliced vegetables to perk up the pav bhaji sandwich
  22. Repeat steps 22 and 23 to prepare other pav bhaji sandwiches.
  23. Serve the  pav bhaji sandwich | leftover pav bhaji sandwich | pav sandwich | immediately or cool completely and pack in an aluminum foil and put in a dabba.

Pav bhaji sandwich, my nephew always tempted to take pav bhaji to school, but not give him as it would leak. And this recipe has made work easy, pav bhaji can be taken without much of mess, i am so happy with this recipe. And it stays fresh with out getting soggy.
