Halwa can be made with roasted flour, grated veggies or mashed fruits. The key ingredient is essentially cooked with sugar and ghee to get a soft, luscious, heartwarming sweet dish, resplendent with the aroma of ghee and Indian spices like cardamom.
You can smell a classic halwa even before you see it – that means it has been done right. Halwas are made all over India. While some like the Sooji ka Halwa, Moong Dal Halwa, Badam Halwa and Carrot Halwa are popular all over the country, each region has its specialty too, like the Wheat Halwa of Tamil Nadu, which is made with the milk extracted from soaked wheat! Halwas, unlike sheeras and kheers are usually slow-cooked to get a rich taste.
Even a small portion is enough to satisfy your sweet tooth. However, there are quick-fix versions that you can cook in a jiffy too. So, worry not. Before we begin making the quick Gajar Halwa, clean and wash the carrots. Make use of tender, juicy, firm red carrots to get that naturally sweet gajar ka halwa.
Peel it using a scraper and discard the skin. To get 2 cups of grated carrot we have used 4 medium-sized carrots.
Grate the carrots using a box grater. You can use the shredding disc on your food processor but do not grind the carrots in a blender. Keep aside.
Also, we crumble the mawa and chop almonds.
Assemble all the ingredients for gajar ka halwa.
To prepare carrot halwa, heat the ghee in a deep non-stick kadhai. Ghee imparts a wonderful flavor to the gajar halwa.
Add the carrots.
Mix well and cook on a medium flame for 6 to 8 minutes, while stirring continuously. You will notice it will turn soft and change color slightly.
Add sugar. You can add more or less sugar as per the sweetness you prefer.
Mix well and cook on a medium flame for 2 minutes, while stirring continuously.
