A wonderful quick Indian dessert, rava sheera can be prepared in minutes. It does not require much advance preparation, and can be whipped up even at short notice. suji ka halwa is traditional, yet modern in its simplicity, making it a sheer delight.

suji ka halwa is made by roasting rava in ghee, then adding milk, water, sugar and nuts which are then cooked on a slow flame for 10 minutes.

I would like to share some important tips to make the perfect sooji halwa. 1. Using warm milk is important as it will help the semolina cook faster. 2. Add 2½ cups of hot water. These liquids will help in cooking the semolina properly. 3. Cover and cook suji ka halwa on a slow flame about 10 minutes, while stirring occasionally. It might take a little more or less time as it depends highly on the quality of the sooji and also the flame on which it is cooked.

For rava sheera

  1. To make rava sheera, heat the ghee in a broad non-stick pan, add the semolina and sauté on a slow flame for 6 to 8 minutes. , while stirring occasionally.
  2. Add the milk, 2½ cups of hot water, mix well and cook for 1 to 2 minutes, while stirring continuously.
  3. Add the sugar, raisins and cashewnuts and mix well. Cover and cook on a slow flame for about 10 minutes, while stirring occasionally.
  4. Add the cardamom powder, mix well and cook on a medium flame for 1 minute.
  5. Serve the rava sheera immediately garnished with cardamom powder, raisins and cashewnuts.

How to make Rava Sheera/Sooji ka Halva

 

    1. To make rava sheera recipe | suji ka halwa | sooji halwa |, take a broad non-stick pan and put ghee into it. Let the ghee get heated up.
    2. Add the semolina.
    3. Roast on a slow flame for 6 to 8 minutes, while stirring occasionally or till it turns golden brown in color or till you get the aroma of the Rava. It should only be cooked on a slow flame to prevent the sooji from burning.
    4. Now add the milk. Using warm milk is important as it will help the semolina cook faster.
    5. Add 2½ cups of hot water. These liquids will help in cooking the semolina properly.
    6. Mix well and cook on a slow flame for 1 to 2 minutes, while stirring continuously.
    7. Now add the sugar. You may decrease or increase the quantity of sugar to your desired level of sweetness.
    8. Add the chopped raisins and cashew nuts. You can also use other dry fruits like almonds, pistachio, walnuts, etc. 
    9. Mix well so that all the ingredients get incorporated into the Rava Sheera.
    10. Cover and cook on a slow flame about 10 minutes, while stirring occasionally. It might take a little more or less time as it depends highly on the quality of the sooji and also the flame on which it is cooked. 
    11. Add the cardamom powder. You can also flavor your Rava sheera with saffron. Soak the saffron in about 1 tbsp of warm milk and incorporate it into your sheera along with the milk.
    12. Mix Rava sheera, Sooji ka Halva well and cook on a medium flame for 1 minute.
    13. Your rava sheera | suji ka halwa | sooji halwa | is now ready to serve. Serve hot garnished with cardamom powder, raisins and cashew nuts or any other dry fruits.

Yes, the Rava-Sheera Recipe was easy and quick to make. Especially when visitors drop in to visit and stay for lunch, so this is an excellent sweet dish instead of a dessert.

Something wrong with the recipe, the ingredients does not list water yet the method says to add water and milk.

I used corn rava to make it gluten free , the ghee could have been easily 1 tbsp lesser. I used erythrit /Stevia instead of sugar and used half the recommended amount. It was more than sweet enough. The ghee used was ouzing from the sides. But thank you.

I tried it and it was superb. I have this question. Can I add sugar in the water and pour the sugary water over the sauteed rava? By doing this, i don''t have to add it separately. Unless you suggest otherwise

I relished the outcome of this recipe. I usually prefer not so sweet. So I reduced the sugar a little also I added some saffron with milk. It was so delicious.

Hi Sid, Store it in an air-tight container and it will stay fresh in the freezer for atleast 10 days in fridge for 3 to 4 days
