For Low Fat Carrot Halwa
2 cups thickly grated carrot
1 tsp ghee
1 cup low fat milk
1/4 cup deseeded and chopped dates (khajur)
1/4 tsp cardamom (elaichi) powder
  1. Heat the ghee in a pressure cooker, add the carrots and sauté on a medium flame for 5 minutes.
  2. Add ¾ cup of milk and dates, mix well and pressure cook for 2 whistles.
  3. Allow the steam to escape before opening the lid.
  4. Add the remaining ¼ cup of milk and cardamom powder, mix well and cook on medium flame for 4 minutes, while stirring continuously.
  5. Serve hot.

How much is one serving of halwa ?

Tarla Dalal    Karan, one serving is an estimate of what you would eat. This is a healthy Indian sweet where ghee is healthy for you. We have used dates as a sweetener in this recipe which works for diabetics also.

Tastes similar to authentic gajar halwa with a slight sweet taste of dates... But it''s a great option to add sweetness to sweets using dates instead of refined sugar. I will follow only this recipe henceforth.
