Ingredients

For Dry Fruit Milkshake
1/4 cup deseeded dates (khajur)
2 tbsp cashew nuts (kaju)
1/4 cup peeled almonds (badam)
1/4 cup walnuts (akhrot)
5 to 6 dried figs (anjeer)
2 tbsp powdered sugar
2 cups chilled milk

For The Garnish
5 tsp chopped mixed nuts

  1. To make dry fruit milkshake, combine the dates, cashewnuts, almonds, walnuts and figs in enough hot water in a deep bowl, cover it with a lid and keep aside to soak for 30 minutes.
  2. Strain it using a strainer and discard the water.
  3. Combine the soaked mixed nuts, ¾ cup of milk and sugar and blend it in a mixer till smooth.
  4. Add the remaining 1¼ cups of milk and blend it again till smooth.
  5. Pour equal quantities of the milkshake into 5 individual glasses.
  6. Garnish each glass of dry fruit milkshake with 1 tsp of mixed nuts and serve immediately.

How to make dry fruit milkshake

  1. Before we begin making the dry fruit and nuts milkshake, in a deep bowl take dates.
  2. Add cashewnuts.
  3. Add almonds. These nuts help in achieving thick consistency and creamy texture.
  4. Add walnuts. Apart from these, you can even use raisins, hazelnuts or pistachios. You can increase or decrease the quantity as per your liking or exclude any if unavailable.
  5. Add figs.
  6. Pour enough hot water to soak them. Cover it with a lid and keep aside to soak for 30 minutes. If using regular water, the soaking period will be long (approx 2-3 hours). Soaking them will soften them and ease in grinding.
  7. After half an hour, you will notice our dry fruits have softened.
  8. Strain them using a strainer and discard the water. You can peel the pistachios lightly if you like. If your mixer grinder is not that powerful then even chop the dates and figs.
  9. Transfer the soaked mixed nuts to a mixer jar.
  10. Add ¾ cup of milk. For a vegan variation, make use of soy milk or almond milk. Adding all the milk at once will leave a lot of dry fruit chunks. At this stage, we just want a paste from dry fruits.
  11. Add sugar. If you wish to skip the sugar and keep it naturally sweet then add more dates and figs. Healthier alternatives like stevia, jaggery, or palm sugar can also be used.
  12. Blend it in a mixer till smooth.
  13. Add the remaining 1¼ cups of milk.
  14. Blend it again till smooth and frothy. This dry fruit milkshake is very rich in iron and calcium. You can add more milk if you want a thin consistency.
  15. Pour equal quantities of the dry fruits milkshake into 5 individual glasses.
  16. Garnish each dry fruit milkshake glass with 1 tsp of mixed nuts. You can even place a few saffron strands to make them look more appealing.
  17. Serve dry fruits nuts milkshake immediately. This milkshake can be prepared during fast (vrat) as it is rich and energy-boosting.
