For the white sauce
 

  1. Heat the butter in a pan and sauté the garlic for 1 to 2 seconds.

  2. Add the flour and sauté for 2 to 3 minutes.

  3. Add the milk gradually, stirring continuously so that lumps do not form. Add ½ cup of water and mix well.

  4. Bring to a boil and add the cheese, salt and pepper and mix well. Keep aside.


How to proceed
 

  1. To make vegetable au gratin, combine the vegetables and the white sauce and mix well.

  2. Pour into an oven proof bowl and sprinkle the cheese on top

  3. Bake in a pre-heated oven at 200°c (400°f) for 10 to 15 minutes till the cheese melts and is lightly browned.

  4. Serve the vegetable au gratin with warm garlic bread.

For the white sauce

 

    1. To prepare the white sauce for vegetable au gratin |  Indian style veg au gratin | heat the butter in a pan.
    2. Once the butter is hot and melted, add garlic and sauté for 1 to 2 seconds. To make Jain white sauce, skip adding the garlic.
    3. Add the flour.
    4. Mix well and cook on a slow flame for 1 to 2 minutes, while stirring continuously with the help of a whisk. This is called a roux which acts as a thickening agent for the white sauce. The frequent stirring helps in even cooking of the flour apart from preventing it from forming lumps.
    5. Once you see the flour has become a little froth and golden in color, reduce the flame to low and add the milk. Pour the milk with one hand and whisk using the other hand. If you are vegan or allergic to dairy products, then use almond milk or soy milk.
    6. Whisk well and cook on a medium flame for 2 to 3 minutes, or till the sauce thickens, while stirring continuously. It is very important to mix continuously after you add the milk and whisk until the flour and milk have incorporated well so that lumps do not form.
    7. Add the cheese. Processed cheese can be swapped with cheese slice or cheddar cheese, parmesan cheese, mozzarella cheese. This veg casserole is heavy on the stomach. To make it relatively light you can reduce the quantity of cheese and butter.
    8. Add salt. We have added salt while boiling the vegetables, butter, and cheese both contain salt so, add it accordingly. Add pepper also.

    1. For preparing vegetable au gratin, in a deep bowl take the chopped and boiled mixed vegetables. You can make use of vegetables to suit your taste and seasonality like broccoli, cauliflower, potatoes, capsicum, sweet corn, and baby corn. Hello I have tried this recipe many times. But the white sauce always turns bitter after baking. Please help. I add sugar and pineapple since I like sweet taste baked veggies
