Ingredients

For The Batter Fried Apples
1 1/2 cups peeled and sliced apples
1/2 cup plain flour (maida)
2 tbsp cornflour
1/4 tsp baking powder
a pinch of salt
oil for deep-frying

For The Caramel Syrup
1 cup sugar
2 tbsp oil
1 tbsp roasted sesame seeds (til)
Method

For the batter fried apples

  1. Combine the plain flour, cornflour, baking powder, salt and approx. ½ cup of water in a deep bowl and mix well using a whisk till smooth.
  2. Heat the oil in a deep non-stick pan, dip the apple pieces into the batter and deep fry in hot oil, a few at a time on a medium flame, till they turn golden brown in colour from both the sides. Drain on an absorbent paper and keep aside.

For the caramel syrup

  1. Combine the sugar, oil and ½ cup of water in a broad non-stick pan, mix well and cook on a high flame for 2 minutes, while stirring occasionally.
  2. When the mixture begins to bubble, allow it to caramelize on a slow flame for 10 minutes, without stirring. If required, shake the pan gently to prevent the sugar from burning around the edges of the pan.
  3. Remove from the flame, add the sesame seeds and mix well. Keep warm.

  1. Combine the ice-cubes and chilled water in a deep bowl and keep aside.
  2. Dip the fried apple pieces in the caramel syrup till the syrup coats them evenly.
  3. Remove and immerse them in the bowl of ice-cubes and water for a few seconds till the caramel coating hardens. Remove and serve immediately.

Toffee apples.. i never new apples can be made so tasty.. giving it a toffee feel.. This is a perfect end for a chinese meal.. i served it with vanilla ice cream.. and more of sesame seeds.. thank you for this lovely recipe.. I have enjoyed making it..
