Vichyssoise recipe - How to make Vichyssoise

1 recipe of Basic White Stock
3 large leeks (if not available, use white onions )
1 stick celery (ajmoda) (optional)
2 potatoes
2 tbsp butter
1/2 cup fresh cream
2 tsp lemon juice (approx)
chopped parsley
salt and black pepper (kalimirch) powder to taste
  1. Slice the leeks (only the white part), celery and potatoes finely.
  2. Heat the butter and cook these vegetables for at least 4 to 5 minutes.
  3. Add the stock and cook until the vegetables are tender.
  4. Blend the mixture in a liquidiser and strain the soup.
  5. Beat the cream with the lemon juice.
  6. Add the cream with the lemon juice.
  7. Add the cream, salt and pepper to the soup. Chill thoroughly.
  8. Serve cold with chopped parsley.
