मेथी के बीजों को कुचलकर पाउडर बनाने के लिए, उन्हें अधिकतम स्वाद और सुगंध देने के लिए पहले सूखा भूना जाता है। फिर इन भुने हुए बीजों का उपयोग विभिन्न करी के लिए मसाला बनाने के लिए किया जाता है। सांभर बनाने के लिए हमें सबसे पहले सांभर मसाला बनाना होगा, जो मेथी के बीज, काली मिर्च, सौंफ और अन्य बीजों को भूनकर और फिर उन्हें बारीक पीसकर बनाया जाता है।

दक्षिण भारतीय करी में मेथी के बीज का व्यापक रूप से उपयोग किया जाता है। छाछ रसम, चावल के साथ परोसी जाने वाली एक हल्की करी है, इसमें हल्की कड़वाहट के लिए सूखे मसाला पाउडर में मेथी के बीज का उपयोग किया जाता है।

मेथी बीज के व्यंजन जिनमें किण्वन की आवश्यकता होती है |

मेथी के बीज के फायदे
