In love with the flavour of mustard, Bengalis use several types of the seed in their cooking including black and yellow varieties. This, as well as the use of mustard oil and panch phoron, gives their sabzis and gravies a special flavour. Have a go at recipes like Bati Chorichori, Bengali Style Okra, Papaya Tarkari and Baingan Bhaja to experience the magic of Bengali cooking.

When something can be cooked quickly and easily, and is also too tasty to resist, it appeals to everybody! such is the case with the Bengali Style Okra. A fine powder of mustard and poppy seeds lends a unique flavour to this subzi.

If you want to try your hand at Bengali cooking, panch phoron is one of the first spice mixes you need to keep ready. Without panch phoron, Bengali cooking is just incomplete! There is no roasting or grinding to make the Bengali panch phoron masala. It is just a combination of five seeds namely cumin seeds, mustard seeds, fenugreek seeds, fennel seeds and nigella seeds.

Simple one-pot and nutritious Bengali style dalia vegetable khichuri is a hearty and flavorful dish that is made with broken wheat (dalia), loads of fresh veggies, lentils and panch phoron. Khichuri is a popular Bengali dish and a flavourful comforting meal which is often served for dinner or lunch. is my go-to meal for busy days.

Which is the most common oil used to make Bengali sabzi ?

For many, the essence of Bengali sabzi is captured in the unmistakable flavor of mustard oil (Sarson ka tel, Rai ka tel )Mustard oil is particularly prized for its use in dishes like aloo posto.

The use of mustard in many forms – as seeds, paste and oil too – is a classic characteristic of Bengali cooking. In this traditional Bengali -style sabzi too, mustard paste is what gives the special flavour. Bati Chorichori, so full of veggies, is a delight to behold and consume.

Aside from mustard oil, coconut oil, refined vegetable oil and ghee are used in Bengali sabzis.
