Necessity is indeed the mother of all inventions. When I was experimenting with some new recipes, I ran out of soya granules and did not know what to do! So, I ground some soya chunks instead and used them in the recipe and it turned out to be awesome. It soaks up water and increases the bulk of any recipe, especially useful for making stuffing for Parathas like in Dal and Soya Parathas, page 33. You can powder the soya chunks in bulk and store them in an air-tight container and use as required.
