To make Garlic Tomato Chutney, we have soaked red chilies in warm water and roughly chop them. To proceed, in a non-stick pan, with some oil we have started by cooking spring onions and garlic with give a crunch to the chutney and once they are cooked, we have added red chilies to them. Further, we have added tomatoes with little water and cooked it well with side by side mashing tomatoes with back of the spoon which helps in releasing juice from the tomatoes so as to get the moist chutney like consistency. Lastly, we have added coriander for freshness and spring onion greens to provide crunch. Mix well and our Tomato Garlic Chutney is ready to be relished!!

Ingredients
For Garlic Tomato Chutney
- 6 to 8 large sized garlic (lehsun) cloves , finely chopped
- 1/4 cup chopped spring onions whites
- 1 tbsp finely chopped spring onion greens
- 2 pandi chillies , soaked
- 1 cup finely chopped tomato
- 1 tbsp finely chopped coriander (dhania)
- 1 tsp olive oil
- salt to taste
Method
For garlic tomato chutney
- To make garlic tomato chutney, drain the soaked chillies and chop them finely.
- Heat the oil, add the onions and garlic and sauté over a slow flame for 4 to 5 minutes till they are lightly brown.
- Add the chillies and salt and sauté again.
- Add the tomatoes and cook for 10 to 12 minutes over a slow flame till the tomatoes are soft and can be mashed lightly.
- Cool completely and add the coriander and spring onion greens and mix well.
- Serve garlic tomato chutney chilled or at room temperature.

To make garlic tomato chutney, first soak 2 red chillies in warm water for 15 minutes.

Then finely chop them.

Heat the 1 tsp olive oil in a broad non-stick pan.

Add 6 to 8 large sized garlic (lehsun) cloves , finely chopped to it. You need to peel the garlic cloves and finely chop the garlic. You will need 1½ tbsp of finely chopped garlic. Sauté the spring onions whites and garlic on a medium flame for 1 to 2 minutes.

Add the 1/4 cup chopped spring onions whites now. The spring onion whites lend a slight sweet taste to this Garlic Tomato Chutney.

Next add the soaked Kashmiri red chillies.

Then add 1 cup finely chopped tomato. While chopping them, avoid the white part and discard it.

Mix well with the help of a ladle. Cook on a slow flame for 3 to 4 minutes. Keep stirring the mixture for Garlic Tomato Chutney continuously and lightly mashing with the back of a spoon. This will help in releasing juice from the tomatoes so as to get the moist chutney like consistency, as this chutney is chunky and not blended till smooth.

Switch of the flame and add the flavourful herb coriander. Add 1 tbsp finely chopped coriander (dhania) so it blends well with the mixture.

Add the 1 tbsp finely chopped spring onion greens. These add a great mouthfeel to the Lehsuni Tomato Chutney.
