Ingredients

For Cabbage and Paneer Rolls
28 fresh bread slices

To Be Mixed Into A Stuffing
1 cup grated cabbage
1/2 cup crumbled paneer (cottage cheese)
1/4 cup finely chopped spring onions whites
1/4 cup finely chopped spring onion greens
1 tbsp hot and sweet chilli sauce
2 tsp finely chopped green chillies
salt to taste
2 tbsp finely chopped coriander (dhania)

Other Ingredients For Cabbage and Paneer Rolls
2 tbsp plain flour (maida)
oil for deep-frying

For Serving With Cabbage and Paneer Rolls
hot and sweet chilli sauce
Method

For cabbage and paneer rolls

  1. To make cabbage and paneer rolls, combine the plain flour and 2 tbsp of water in a small bowl, mix well and keep aside.
  2. Remove the crust from all the bread slices and roll each slice with help of a rolling pin.
  3. Put approx. 2 tsp of the stuffing on one side of the bread slice and roll it up tightly.
  4. Apply some plain-flour water mixture at the edges sides, press to seal it.
  5. Repeat steps 3 and 4 to make 27 more cabbage and paneer rolls.
  6. Heat the oil in a deep non- stick pan and deep-fry, a few rolls at a time on a high flame, till they turn golden brown in colour from all the sides. Drain on an absorbent paper.
  7. Serve the cabbage and paneer rolls immediately with hot and sweet sauce.

Stuffing for cabbage and paneer rolls

  1. To prepare the stuffing for cabbage and paneer rolls, in a deep bowl take grated cabbage.
  2. Add crumbled paneer.
  3. Add finely chopped spring onions whites.
  4. Add finely chopped spring onion greens. You can add any other veggies of your choice just make sure to chop or grate it finely so the paneer cabbage rolls do not break while rolling.
  5. Add 1 tbsp of hot and sweet sauce to elevate the taste of cabbage paneer rolls. If you do not have this then make use of ½ tbsp tomato ketchup and ½ tbsp chilli sauce.
  6. Add finely chopped green chillies as per the spice you prefer.
  7. Add the coriander.
  8. Add salt.
  9. Mix well using your hands and our stuffing is ready to make deep-fried bread paneer rolls. Check the taste and adjust the flavours according to your palate preference. Also, once the stuffing is ready you have to use it immediately or else it will be watery.

How to make cabbage and paneer rolls

  1. To seal the edges of bread paneer and cabbage rolls, in a small bowl take plain flour.
  2. Add 3 tbsp of water.
  3. Mix well and keep aside.
  4. Place the bread slice on a clean, dry chopping board and remove the crust using a serrated knife. Make use of fresh big bread slices, stale bread are hard and firm and they might break while rolling. We have used white commercial bread as they have various leavening agents in it so you can roll them easily.
  5. Roll a bread slice with the help of a rolling pin. Apply pressure evenly so, it flattens uniformly from all the sides. Be gentle while rolling or else the bread slice might break.
  6. Repeat step 4 and 5 to prepare all the bread slices similarly.
  7. To make cabbage and paneer rolls, put approx. 2 tsp of the stuffing on one side of the bread slice. Do not overstuff the bread slice or else it will become difficult to roll them.
  8. Roll it up tightly making sure that the stuffing stays well inside.
  9. Apply some plain-flour water mixture at the sides of the edges.
  10. Press to seal it.
  11. Apply some plain-flour water mixture on both the sides of the bread roll and press it tightly.
  12. Repeat steps 7 to 11 and make 27 more bread rolls.
  13. To fry the cabbage and paneer rolls, heat the oil in a deep non- stick pan and drop in a few rolls at a time on a high flame. Do not over-crowd the pan or else the temperature of the oil will drop drastically.
  14. Fry till the paneer bread roll turn golden brown in colour from all the sides. You can also butter up the rolls well on all sides and pan-fry/shallow fry the cabbage and paneer rolls.
  15. Drain cabbage and paneer rolls on an absorbent paper.
  16. Similarly, deep fry all the remaining cabbage paneer rolls.
  17. Serve cabbage and paneer rolls | veg cabbage and paneer rolls | cabbage paneer rolls party starters | immediately with hot and sweet sauce.

The stuffing and recipe are awesome, everyone liked it but the rolls turned out to be way too oily! The oil was dripping from the rolls so badly.
