Ingredients
For Baked Palak Methi Puris
1/2 cup chopped spinach (palak)
1/4 cup chopped fenugreek leaves (methi) leaves
1/4 cup jowar (white millet) flour
1/4 cup bajra (black millet) flour
2 tbsp whole wheat flour (gehun ka atta)
2 tbsp low fat curds (dahi)
1 tsp ginger-green chilli paste
salt to taste

1 tsp peanut oil for greasing
Method
- Combine all the ingredients in a deep bowl and knead into a soft dough using enough warm water.
- Divide the dough into 4 equal portions and roll one portion of the dough into about 200 mm. (8") diameter circle, without using flour.
- Take a small cookie cutter or vati of 1¾" and cut 8 small puris from it.
- Prick it with a fork. Gather up the scraps, knead, roll and repeat the process. You will get 44 papdis in all.
- Bake them in a pre-heated oven at 180°c (360°f) for 30 minutes or till the palak methi puris are golden brown. Flip them after 15 minutes.
- Repast step 5 to bake 1 more batch of baked palak methi puris.
- Cool the baked palak methi puris completely and use as required or store in an air-tight container.
