The instant khaman dhokla is an all-time favourite Gujarati snack that is served with peppy green chutney at tea time. microwave khaman dhokla has an exquisite texture and appetizing flavour, but is surprisingly easy to make, especially this version that is made in the microwave oven.
To make quick microwave khaman dhokla, take besan, add semolina for a grainy mouthfeel, add citric acid, add sugar as we aren't adding the sugar water tempering to this dhokla recipe, so add sugar in the batter itself. Further, add ginger green chilli paste and lastly add water and mix well make sure there are no lumps left. Just before cooking the instant khaman dhokla add fruit salt and pour little water over it to activate the fruit salt and mix gently. Further, to cook it grease a microwave safe bowl, pour half of the batter to it and microwave for 2 minutes. Check by poking a toothpick if quick Gujarati besan dhokla is cooked and keep aside. Further, for the tempering heat oil in a bowl, add mustard seeds, sesame seeds, asafoetida and green chillies microwave for 1 min and pour over the prepared dhokla. Further, cut the instant khaman dhokla into squares and garnish with coriander and grated coconut.

- To make khaman dhokla, combine the besan, semolina, citric acid, sugar, ginger-green chilli paste and salt with ¾ cup of water in a deep bowl and mix well till no lumps remain.
- Add the fruit salt and 1 tbsp of water over it. When the bubbles form, mix gently.
- Pour half the batter into a greased 150 mm. (6") diameter microwave safe dish and microwave on high for 2 minutes.
- Repeat step 3 to make the one more batch of khaman dhoklas. Keep aside.
- Heat the oil in a microwave safe small bowl and add the mustard seeds, sesame seeds, green chillies and asafoetida and microwave on high for 1 minute.
- Pour equal quantities of the tempering over both the batches of steamed dhoklas.
- Cut the khaman dhokla into pieces, garnish with coriander and serve immediately with green chutney.

Add citric acid. You can even make use of lemon juice as a substitute.
Add sugar. Since we are not putting the sugar - water tempering in this instant dhokla recipe, we will be adding the sugar in batter itself.
Add ginger-green chilli paste. We have made one using this recipe of Ginger Green Chilli Paste.
Add salt with ¾ cup of water.
Mix well till no lumps remain and our khaman dhokla batter is ready.
Just before cooking the instant khaman dhokla, add the fruit salt.
Pour 1 tbsp of water over it. This will activate the fruit salt.
When the bubbles form, mix gently. If you stir vigorously, the bubbles will escape and the dhoklas will be dense and flat.
To cook khaman dhokla in a microwave, grease 150 mm. (6") diameter microwave safe dish with oil.
Pour half the batter into it. Always fill up only 75% (height) of the dish. The dhoklas grow substantially in volume and become fluffy.
Microwave on high for 2 minutes. Usually I prepare khaman dhokla in a steamer using this recipe but, when I have less time, this microwave khaman dhokla and Microwave Mug Dhokla Recipe comes really handy.
Repeat step 2 and 3 to make one more batch of khaman dhoklas.
Poke a toothpick or knife to check if the microwave khaman dhokla | instant khaman dhokla | quick Gujarati besan dhokla | has cooked completely, else cook for a minute again in microwave. Keep aside.
To temper microwave khaman dhokla | instant khaman dhokla | quick Gujarati besan dhokla | heat the oil in a microwave safe bowl for 1 minute.
Add mustard seeds.
Add sesame seeds.
Add green chillies and asafoetida.
Microwave on high for 1 minute.
Pour equal quantities of the tempering over both the batches of steamed dhoklas.
Cut into squares, diamond or rectangular pieces.
Garnish with coriander. Also, you can garnish with freshly grated coconut.
