Ghugaras is cripsy fried vegetable snack item. The wheat flour and curd based dough is stuffed with grated cucumber, coconut and spices. These stuffed ghugharas are then deep fried afer sealing the edges and enjoyed with chutney or sauce of choice.

250 gms whole wheat flour (gehun ka atta)
750 gms plain flour (maida)
2 tbsp curds (dahi)
2 tbsp oil
salt to taste

For the stuffing:
250 gms grated cucumber and little salted
250 gms grated paneer (cottage cheese)
250 gms grated processed cheese
2 tsp black pepper (kalimirch) powder
1 tsp sugar
1 tbsp grated green chillies
1 tsp ginger (adrak) paste
2 tbsp or as required chaat masala
chopped coriander (dhania)
1 tbsp lemon juice
salt to taste

  1. Prepare the dough adding all the above ingredients of dough.knide it well,cover it and keep it aside for 2 hours. take care do not make a very soft or very hard dough.

  1. Now, grate the cucumber and add some salt to it and leave it aside for some time and then remove all the excess water from the cucumber.
  2. Now, take the grated cucumber, paneer ,cheese, and add all the rest of the ingredients and mix it well.

  1. Divide the dough into 20 equal portions.
  2. Roll out each portion into a 75 mm. (3") diameter circle.
  3. Place a spoonful of the stuffing mixture in the centre of each circle.
  4. Gently fold the circle into a semicircle and seal the edges.
  5. To decorate the edges, twist the edges carefully with the thumb and forefinger.
  6. Deep fry in hot oil over medium heat till golden brown in colour.
  7. Serve hot with green chutney or ketchup.
