For The Dough
5 tbsp whole wheat flour (gehun ka atta)
1/2 tsp oil
salt to taste

For The Filling
1/2 cup boiled mixed sprouts
2 tbsp coarsely crushed oats
a pinch of asafoetida (hing)
3/4 tsp chilli powder
1/8 tsp turmeric powder (haldi)
1/4 tsp coriander (dhania) powder
1/4 tsp cumin seeds (jeera) powder
1/4 tsp dried mango powder (amchur)
1/4 tsp chaat masala
2 tbsp finely chopped coriander (dhania)
salt to taste

1 tsp oil for brushing

For the dough

    For the dough
  1. To make the dough for baked mixed sprouts samosa, combine all the ingredients in a deep bowl and knead into a stiff dough using 2 tbsp water. Keep aside.

  1. Put the mixed sprouts in a deep bowl and mash it lightly when hot with the back of a spoon.
  2. Add all the remaining ingredients and mix very well using your hands. Keep aside.

  2. Roll out a portion of the dough into 150 mm. (6”) diameter thin oval shape.
  3. Cut the oval horizontally into 2 equal portions using a knife.
  4. Take a portion and join the edges to make a cone and seal it with little water.
  5. Stuff the cone with approx. 1 tbsp of the filling and apply little water on the edges to seal it.
  6. Repeat with the remaining dough and filling to make 15 more samosas.
  7. Place them on a greased baking tray and bake in a pre-heated oven at 180°c (360°f) for 15 minutes.
  8. Remove the tray and brush all the samosas using 1 tsp oil, turn them over and bake them again for 15 minutes.
  9. Cool slightly and serve baked mixed sprouts samosa immediately with green chutney.
