The moment you think of the term Coconut Gravy, you think of a gravy made of coconut milk or a paste of spices and coconut. This is a very different recipe, in which the gravy is made of coconut water and coconut meat, enhanced with a ginger-onion-green chilli paste.

1/2 cup chopped french beans
1/2 cup chopped carrots
1/4 cup green peas
1 1/4 cups tender coconut water
1/2 cup roughly chopped tender coconut meat
1 tbsp cornflour
1 tbsp oil
1/2 tsp cumin seeds (jeera)
salt to taste

To Be Ground Into A Smooth Paste (without Using Any Water)
1/2 tbsp roughly chopped green chillies
1/2 cup roughly chopped onions
1/2 tsp roughly chopped ginger (adrak)
  1. Combine the coconut water, coconut meat and cornflour in a mixer and blend till smooth. Keep aside.
  2. Combine the french beans, carrot , green peas and ½ cup of water in a microwave safe shallow dish and microwave on high for 4 minutes. Drain well and keep aside.
  3. Put the oil in a microwave safe bowl and microwave on high for 20 seconds. Add the cumin seeds and microwave on high for 1 minute.
  4. Add the prepared paste, mix well and microwave on high for 1 minute.
  5. Add the coconut water mixture, mix well and microwave on high for 2 minutes 30 seconds, while stirring twice in between.
  6. Add the boiled vegetables and salt, mix well and microwave on high for 2 minutes, while stirring once in between.
  7. Serve immediately.

Vegetables in spicy coconut gravy.. different taste of the gravy.. a bit sweet and spicy combination.. which is too good.. My family enjoyed this recipe.. a lot..
