Baked Vegetables in Spinach Sauce  | Creamy Spinach Vegetable Bake | Baked Veggies in Spinach Puree |

Baked Vegetables in Spinach Sauce is a rich, comforting, and nourishing Creamy Spinach Vegetable Bake that beautifully blends the goodness of assorted vegetables with a velvety spinach-based white sauce. This dish transforms everyday veggies like carrots, beans, peas, and cauliflower into a gourmet-style preparation that is both colourful and delicious. The spinach purée adds not only an appealing green hue but also a nutritious twist, making this recipe a wholesome choice for family meals.

The heart of this dish lies in its Spinach Sauce, made by lightly sautéing spinach, blending it into a smooth purée, and combining it with a classic white sauce of butter, flour, and milk. This creates a creamy, flavour-rich base that coats each vegetable beautifully. The addition of spinach elevates the sauce by giving it a fresh, earthy flavour, making it more vibrant and exciting compared to traditional white sauce. A hint of pepper brings in the perfect mild spice to balance the creaminess.

The boiled mixed vegetables are then added to the spinach sauce along with fresh cream, salt, and pepper, enhancing the dish’s richness. The vegetables retain a slight crunch, providing a delightful contrast to the smooth sauce. This harmony of textures and flavours makes the dish a favourite among both children and adults, while also offering a nutritious way to incorporate more greens and vegetables into one’s diet.

Once combined, the mixture is poured into a baking dish and topped generously with grated cheese. Baking at 180°C (360°F) for 10–15 minutes melts the cheese into a golden, bubbly crust, turning the dish into a comforting, oven-baked delight. The aroma of warm spinach sauce and cheese fills the kitchen, making this Baked Veggies in Spinach Purée hard to resist.

Overall, Baked Vegetables in Spinach Sauce is a flavourful, wholesome dish with a creamy, colourful twist. It pairs wonderfully with garlic bread, toasted baguettes, or even simple herb rice. Packed with nutrients from spinach and vegetables, and enriched with a creamy base, this preparation is perfect for family dinners, potlucks, or festive meals—an elegant yet easy way to enjoy vegetables in a luxurious, comforting form.

Tasty dish, but can do without baking. Just make the sauce a bit thick and pour it over the boiled veggies. CB

Tasty dish, but I feel there is little need to bake it. Tastes just as good by pouring the sauce on boiled veggies.

Yes, you can try doing that but it would not take so much time. Microwave on HIGH till the cheese melts.

I was surprised how ?non? Indian this dish was, incorporating a roux and cheese. So when I cooked the spinach for the pur?e, I added some garlic and ginger, red onion, coriander powder, a bit of cardamom, and Garam masala to give it a Vedic flair. In the oven now.
