Experience a bowl of pure freshness with this Indian-style Lettuce Soup — a delicious and nourishing blend of iceberg lettuce, celery (ajmoda), onions, and a touch of butter for flavor. Whether enjoyed hot or cold, this light yet creamy soup offers a unique twist on classic soups and brings the goodness of green leafy vegetables right to your table. It’s a perfect way to enjoy a wholesome, low-calorie meal packed with essential nutrients.

🧈 Simple Ingredients, Big Nutrition

This folic acid, calcium, and protein-rich lettuce soup is prepared using just a few everyday ingredients: 6 cups of chopped iceberg lettuce, 1 ½ tsp butter, 1 cup chopped onion, 1 tbsp celery, 1 cup milk, and 2 cups water. A dash of restricted salt and freshly ground black pepper (kalimirch) adds just the right flavor. The combination of lettuce and milk provides a smooth texture and boosts both calcium and protein, making it ideal for health-conscious eaters.

🍲 How to Make Lettuce Soup

To make Lettuce Soup, start by heating butter in a deep non-stick pan. Sauté the onions on a medium flame for 2 minutes, then add the celery, lettuce, water, and milk. Cook for 7 minutes, stirring occasionally, then allow it to cool slightly before blending till smooth. Reheat the blended soup, add salt and pepper, and simmer for 2–3 minutes. This gentle cooking method preserves the folic acid and vitamins in lettuce, ensuring you enjoy both flavor and nutrition in every sip.

❤️ Good for Diabetics and Heart Health

This low-calorie, low-fat soup is excellent for diabetics as it helps manage blood sugar levels due to its high fiber and low glycemic index. The antioxidants in lettuce and celery support heart health by lowering cholesterol and improving blood circulation. The use of restricted salt makes it heart-friendly, while milk and lettuce add valuable protein and calcium, supporting overall cardiovascular well-being.

⚖️ Ideal for Weight Loss and Acidity

If you’re looking for a light meal option, this Lettuce Soup is perfect for weight loss. It is low in calories, high in water content, and helps keep you full for longer. Lettuce has alkaline properties, making it soothing for those suffering from acidity or acid reflux. Having this soup warm before dinner helps control appetite and improves digestion naturally.

🤰 Beneficial for Pregnancy and Blood Pressure

Rich in folic acid, calcium, and iron, this soup is especially beneficial during pregnancy, supporting fetal development and preventing anemia. The potassium in lettuce helps regulate blood pressure, while the low sodium content keeps it suitable for those with hypertension. Whether you’re expecting, managing weight, or caring for your heart, a bowl of this Indian Lettuce Soup is a nourishing, tasty, and wholesome choice.

Lettuce  is also rich in folic acid, a nutrient which a mother-to-be should start building the reserve of much before conception.
