Ingredients
1/2 cup coriander (dhania)
2 tbsp mint leaves (phudina)
5 flakes garlic (lehsun)
1 tsp caraway seeds (shahjeera)
1 slit green chilli
2 tsp oil
2 onions , finely chopped
200 gms grated cauliflower florets
2 bread
500 gms mashed potatoes
salt to taste
freshly ground black pepper powder powder to taste
2 tsp butter
oil for cooking

Method
    Method
  1. Combine the coriander, mint leaves, green chillies, garlic and caraway seeds in a blender and grind into a fine paste. Keep aside.
  2. Heat the oil in a kadhai and add the onions and saute till it turns light brown in colour.
  3. Add the ground masala paste and salt, mix well and cook for 5 minutes on a slow flame.
  4. Add the grated cauliflower and cook till done and dry.
  5. Keep aside and cool.
  6. Knead the fried cauliflower along with the soaked and squeezed bread slices, mix well to a smooth mixture.
  7. Divide the cauliflower mixture into small portions and roll into balls. Keep them aside.
  8. Combine the salt, butter, pepper and mashed potato in a bowl and knead well to a smooth mixture.
  9. Divide the mashed potato into small portions (larger than the cauliflower-bread balls).
  10. Roll the mashed potato balls into a cup shaped and put the cauliflower-bread dough ball in it.
  11. Close the cup and roll into a kebab, covering the filling completely.
  12. Press it lightly between the palms. Similarly prepare the remaining kebabs.
  13. Heat the oil in a non-stick tawa and shallow fry the rolled cauliflower kebabs on medium heat till well browned on both sides.
  14. Serve hot with tomato sauce.
