Vegetable fried rice is a delightful dish that is extremely popular in india too! chinese rice is cooked and fluffed up with a fork so all the grains are separate. This rice is now ready to be tossed in with the finely chopped vegetables. The carrots and spring onions add a nice crunch while the soya sauce and fresh white pepper give the rice a zingy flavor! this makes an ideal lunch box meal packing in all the nutrition that you need to keep you through the day.

Makes 4 servings
- Heat the oil in a wok or kadhai on a high flame till it smokes.
- Add the french beans, carrots, cabbage, capsicum, celery, spring onion whites and sauté on a high flame for 3 to 4 minutes.
- Add the rice, spring onion greens, soya sauce, white pepper powder and salt, toss well and cook on a high flame for 2 minutes. Serve hot with chilli sauce, soya sauce, chillies in vinegar and vegetable manchurian.
