Veg fried rice, this is one dish that needs no introduction, and indeed it finds a place in every menu – from the street-side to five-star eateries! cooked rice combined with neatly cut juliennes of veggies and tossed in soya sauce. Since it’s a little on the blander side, you can aptly serve with chilli sauce. Goes well with vegetable manchurian.

1 tbsp oil
1 tbsp finely chopped celery
1 cup chopped spring onions whites
1/2 cup capsicum juliennes
1/2 cup french beans juliennes
1/2 cup carrot juliennes
1/2 cup shredded cabbage
3 cups cooked rice (chawal) , refer handy tip
2 tsp soy sauce
a pinch of freshly ground white pepper powder
1 cup chopped spring onion greens
salt to taste

For Serving
chilli sauce
soy sauce
chillies in vinegar
1 recipe veg manchurian
  1. Heat the oil in a wok or kadhai till it smokes, add the celery and sauté on a high flame for a few seconds.
  2. Add the spring onion whites, capsicum, french beans, carrots and cabbage and sauté on a high flame for another 3 to 4 minutes.
  3. Add the rice, soya sauce, pepper, spring onion greens and salt, toss well and sauté on a high flame for 2 minutes.
  4. Place equal portions of noodles on 4 plates and serve immediately with chilli sauce, soya sauce, chillies in vinegar and veg manchurian.

  1. To make 3 cups of cooked rice: boil enough water in a deep pan, add salt, 1 tbsp of oil and 1 cup of soaked and drained short grain rice and cook till the rice is 85% cooked.
  2. Drain using a strainer or colander and refresh using cold water. Let all the water drain out and ensure that the rice do not contain any moisture. Spread evenly on a thali and keep aside to cool completely. Use as required.

How to cook rice perfectly for fried rice

  1. For cooking rice perfectly for Veg Fried Rice, wash 1 cup of rice thoroughly under running water until you get clear water. The removal of starch from rice helps in getting separate grains after cooking.
  2. Transfer in a deep bowl and soak in enough water for 30 minutes.
  3. Drain with the help of a strainer and keep aside.
  4. Boil 4 cups of water in a deep non-stick pan.
  5. Add salt.
  6. Furthermore, add 1 tbsp of oil and mix well.
  7. Add the rice to the boiling water and mix well.
  8. Cook on a medium flame for 8 to 10 minutes or till the rice is 85% cooked, while stirring occasionally.
  9. Strain it using a strainer and let the water drain out. This will give you around 3 cups after cooking. Do not overcook the rice or else they will turn soft and mushy.
  10. Pour some cold water on the rice to stop further cooking. Let all the water from the rice drain out ensuring that the rice does not contain any moisture.

  11. Add the remaining 1 tbsp of oil. This helps in preventing the rice from sticking together.
  12. Toss the rice in it. Ensure each grain is coated well with oil.
  13. Spread the cooked rice on a flat surface or a big plate and allow it to cool for 1 to 2 hours.
  14. Cover the rice with another plate so, the grains don’t dry out.

To make Mumbai roadside veg fried rice

  1. For the Mumbai roadside vegetable fried rice, chop and keep all the vegetables ready!
  2. Heat 3 tbsp of oil in a deep-pan or wok / kadhai over medium-high flame. Select oil with a high smoke point preferably use sesame oil, vegetable oil or peanut oil for best results. Add the finely chopped green chillies, garlic and ginger. You can increase or decrease the quantity as per your preference.
  3. Furthermore, add the celery. This is the most important ingredient of Indo-Chinese recipes, there is no option or substitute for this.
  4. Add the spring onion whites. If you do not have spring onions, make use of red onions or white onions.
  5. Sauté on a high flame for 1 minute.
  6. Add the cabbage.
  7. Now, add the French beans.
  8. Add the carrots. You can even add mushrooms, baby corns, broccoli or bean sprouts.
  9. Finally, add the capsicum. To make the veg fried rice more colorful, you can even add bell peppers.
  10. Mix well and sauté on a high flame for 3 to 4 minutes, while stirring occasionally. Stir-fry the vegetables without overcooking them or else they will lose their crunch.
  11. For the Mumbai roadside vegetable fried rice, chop and keep all the vegetables ready!
  12. Add the salt.
  13. And add the soya sauce. 
  14. Mix gently and sauté on a high flame for 2 minutes, while stirring occasionally. Do not stir the Chinese vegetable fried rice too much otherwise the grains may break.
  15. Add the pepper powder, mix well and cook on a high flame for 1 minute.
  16. Add the spring onion greens to the Veg Fried Rice, mix well and cook on a high flame for 1 minute.
  17. Serve the vegetable fried rice immediately with accompaniments like chilli sauce, soya sauce and chillies in vinegar.

Good with lots of vegetables. Celery can be made 1/4 cup. To make it spicy, add red chilli garlic chutney or schezuan sauce. white pepper powder 1/2 tsp is good.
