  1. Combine all the ingredients in a mixer and blend till smooth using approx. 1 tbsp of water till smooth. Keep aside.

  1. Place a toasted bread slice on a clean, dry surface. Apply ¼ tsp of butter evenly over it. Spread 2 tsp of green chutney, 4 cucumber slices, 4 tomato slices and finally sprinkle a little salt and pepper evenly over it.
  2. Repeat step 1 to make 3 more open sandwiches.
  3. Serve immediately.

i watched it tonight n prepared fr myslf for dinner instantly. i saw this post under food for diabetics. so i thought il eat it. but my sugar levels got raised.. ever since im wondering how come this recipe raised my sigar levels even though its a brown bread n salad sandwich. if u cn send me some good recipes for diabetics il b grateful. im a young diabetic. recntly diagnosed. pregnant currntly. i keep searchng fr simple recipes on youtube fr diabetic diet. pls help.thanku.. im a doctor at d same time

Tarla Dalal    Dear Salma Brown bread also has good amounts of carbs and probably that''s the reason for the raised sugar levels. If you opt for this recipe then restrict yourself to only 1 toast and accompany it with a bowl of healthy salad. You can try other diabetic-friendly recipes from the below link.

Hot whole wheat toast and chilled tomatoes and cucumber make a great combo. Green chutney adds a nice spice element to this lovely evening snack i have often.
