Open sandwiches are always a pretty sight because you get to see all the yummy ingredients in it!
This tangy, crunchy sandwich is a lot more tempting because of the contrasting colours of the tomato and cucumber slices, and the inviting aroma of herbs like mint and coriander, which is highlighted further by the fresh scent of lemon juice.
Just make sure you serve the Tomato and Cucumber Open Sandwich immediately on preparation before the toppings let out water and make the bread soggy.
Tomato and Cucumber Open Sandwich and Coffee Frappe make an apt combination to satiate you in a tasteful way when you are oh-so-hungry!
- Combine all the ingredients in a mixer and blend till smooth using approx. 1 tbsp of water till smooth. Keep aside.
- Place a toasted bread slice on a clean, dry surface. Apply ¼ tsp of butter evenly over it. Spread 2 tsp of green chutney, 4 cucumber slices, 4 tomato slices and finally sprinkle a little salt and pepper evenly over it.
- Repeat step 1 to make 3 more open sandwiches.
- Serve immediately.
